1. When space is limited, retailers should carry a core range that represents the main sectors and the top-selling brands, the best sellers also tend to be the best-supported in terms of advertising and promotional activity.
2. Partners for Growth, an industry advice initiative from Unilever, recommends that retailers stock lines from each product group. It suggests separating butters, spreads and margarine into the gour most popular product groups—butter, buttery spreads, health and baking. Block vertically by brands—top sellers should be placed at eye level and products blocked vertically by brands.
3. However, when space is at a premium, retailers are advised to block horizontally.
4. Experiment with higher-value products, such as cholesterollowering spreads and spreadable butters. These are usually well-supported and can generate additional consumer interest and sales.
5. It is also important that retailers use their own knowledge of their customers, as research shows that specific lines and own-label products can perform better in certain regions. For example, shoppers’ tastes in butter can vary between the north and the south of England.
6. A clean and tidy chiller cabinet is more inviting to customers and will reflect positively on the whole store. Never leave boxes of merchandise sitting around.
